These fudgsicles set a very high standard for all future homemade popsicles to live up to – easily the best fudgsicles I’ve ever had! They definitely lived up to their name – so fudgy and absolutely loaded with chocolate flavor. The texture was spot on too, we couldn’t have loved them more. Promise me that before the summer is over you’ll give them a try. Even if you don’t have a popsicle mold, I’m sure you could make these with paper cups and wooden sticks. You’ll immediately feel like a kid again eating a homemade fudgsicle!

Homemade Fudgsicles

(Note: you can easily double this recipe to make 8 fudgsicles.)
Ingredients:
- 2 tablespoons semisweet chocolate chips
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1 1/2 tablespoons unsweetened cocoa powder
- 1 1/4 cups whole milk
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon unsalted butter
- 4 popsicle sticks
Directions:
Add the chocolate chips to a microwave-safe bowl, and microwave in 30-second bursts on 50% power, stirring in between each, until the chocolate is melted and smooth.
In a medium saucepan, whisk together the melted chocolate, sugar, cornstarch, cocoa powder, and whole milk. Set the pan over medium heat and cook, stirring frequently, until the mixture thickens, about 8-10 minutes. Remove the pan from the heat and stir in the vanilla and butter until incorporated.
Transfer the mixture to a heatproof measuring cup and allow to cool until just warm to the touch. Pour into your popsicle molds. Freeze for 30 minutes, then insert the popsicle sticks. Freeze completely then serve.
Makes 4 fudgsicles.
