Shane and I cooked these up for lunch today after grabbing some ground buffalo at BJ’s yesterday. These were really fun to make. They allowed Shane to use his hamburger press and be actively involved in the process. The hamburger press was really great and made perfect patties for us! We actually made these out on our grill and cooked them for about 3-ish minutes per side. The result was fantastic! The ground buffalo tastes a lot like ground beef, but is fairly lean so definitely more healthy than ground beef. I also think it has more flavor than ground turkey. We have a second pound of ground buffalo in the freezer and I have no doubt we’ll be making these again soon!

Cheddar-Stuffed Buffalo Burgers
from Weight Watchers New Complete Cookbook, by Weight Watchers
Ingredients:
- 1 pound ground buffalo meat
- 1 small Vidalia or other sweet onion, finely chopped (about 1/4 cup)
- 1 teaspoon worcestershire sacue
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup shredded reduced-fat sharp cheddar cheese
Directions:
In a medium bowl, combine the buffalo, onion, worcestershire sauce, salt and pepper. Mix well to combine. Divide and shape the mixture into 4 evenly sized balls. With your finger make a deep indentation into each ball. Fill each hole with 2 tablespoons of the cheese. Pinch the meat closed to cover the cheese and shape each ball into a 3/4-inch thick patty.
Spray a nonstick skillet with nonstick spray and heat over medium-high heat. Cook burgers 3-4 minutes per side for medium-rare.
