Daylight savings time really threw us off today. We woke up late and at least for me, the day just got worse as it went on. So, this is a really quick and easy recipe we threw together tonight after a long Monday at work. I didn’t have high expectations for it as it comes with the “healthy” label but it was surprisingly good. Even Shane ate it and liked it! Best of all, I think it took a grand total of 5 minutes (if that) to get in the oven. We will definitely be adding it to the rotation.

Baked Shrimp in Lemony Garlic Sauce

Ingredients:
- 1 1/4 pounds shrimp
- 2 tablespoons butter, melted
- 1/4 cup fresh lemon juice
- 3 garlic cloves, minced
- 1 teaspoon worcestershire sauce
- 3/4 teaspoon lemon pepper
- 1/4 teaspoon ground red pepper
- 2 tablespoons parsley
Directions:
Preheat oven to 425 F.
Arrange shrimp in a single layer in a 13×9 baking dish coated with cooking spray. Combine lemon juice, butter, garlic, worcestershire sauce, lemon pepper and red pepper in a bowl. Pour over shrimp. Mix to coat.
Bake for 8-10 minutes. Sprinkle parsley over shrimp and serve immediately.
